Prefecture Beef
Japan has 47 prefectures and different prefectures have their own signature beef brands. Each
prefecture’s beef has a unique taste, texture, and fat quality because of genetics, climate, feed, and
traditional care methods. This is why Matsusaka is extra sweet, Kobe is ultra-marbled, and Miyazaki is
rich and smooth.
